While it's a tradition to roast the whole turkey, turkey tenderloin and breast will be comfortable meal on its own. With no waste, less fat and while it may not be as impressive, this tastes as good, is much easier and takes less than half the time to cook.

Cook Time:

Best on the grill for indirect medium/high heat or an oven.

• Set the turkey breast on top a grill rack placed over or in a foil pan. The tray will catch the bacon fat and also allow you to add water in the bottom of the tray to help keep the breast from drying out and leave you with a delicious Jus
• Cook on the grill/bake for 1 hour in a hot oven and check every 5 minutes until a thermometer reads 75C in the center of the breast. Let it rest for 10 minutes before carving into 1/2 inch slices.
